About last night’s DELICIOUS dinner….

✔️ Scrub 4 good size russet potatoes, dry them off.
Coat them with some butter and
wrap in parchment paper or wax paper (I did wax paper)

✔️ place on a microwave-safe plate. Microwave on high for 4-1/2 to 10 minutes or until tender. (This depends on your microwave, so keep checking. A knife should go in easily.) Allow potatoes to cool slightly.

✔️ Cut 2 chicken breasts into cubes and season well with your choice of seasoning. Sauté the chicken in a hot pan with some olive oil until done

✔️ Remove the chicken
In the same pan, combine, 2-3 tablespoons of butter
garlic powder, Cajun seasoning, onion powder, garlic paste and parsley . (And whatever seasonings you like)

✔️ Stir in 1 1/2 cup heavy whipping cream, add Stir in 1/2 cup of your preferred shredded cheese (we used fiesta blend) and stir until sauce it thick and remove from heat.

✔️ Cut potatoes in half lengthwise. Scoop out the pulp and some sauce mixture; mix well. Spoon into potato shells.
Add your chicken to the potato shells
Drizzle the remaining sauce over the chicken
Sprinkle with remaining cheese.

✔️✔️ Bake in oven at 350 degrees until cheese is melted. Top with chives

This was soooo delicious that she ate leftovers (for the first time 😆)
